Baking: Banana Chocolate Chip Oat Muffins

I struggle with finding new things to eat for breakfast. My normal go-to is eggs with kale and turkey bacon. However, there is only so much turkey bacon one human can consume on a weekly basis. These muffins combine the comfort food of oatmeal with the dessert-like quality of chocolate chips. They also aren’t terrible for you which a huge plus in my book.



2 eggs

2 cups of milk (I used cashew milk)

3 cups of oats (I used 2 cups old fashioned, 1 cup steel cut)

1 ripe banana, mashed

2 tsp. baking powder

2 tbsp. brown sugar*

2 tbsp. chocolate chips

½ tsp. cinnamon

¼ tsp. salt

1 tsp. vanilla

2 tbsp. oil



* The muffins are lightly sweetened. If you like your baked goods sweeter, add another 1 tbsp. – 2 tbsp. of brown sugar.



  1. Preheat the oven to 350 degrees
  2. Prep muffin tins with cooking spray or paper liners
  3. In bowl combine oats, sugar, baking powder, chocolate chips, cinnamon, and salt
  4. In separate bowl combine milk, oil, vanilla, eggs, and mashed banana
  5. Mix liquid with dry ingredients, stir well
  6. Ladle mixture into muffin tins, filling them almost the whole way
  7. Bake for approximately 20 minutes, or until set
  8. Let cool for 5 minutes, then remove from pan
  9. Store in sealed container in a dry place
